Ingredients List
- 2 skinless boneless chicken breasts
- 1 pack of Knorr Arroz Blanco
- 2 tbsps of vegetable oil
- 1 medium onion thinly sliced
- 2 cloves of garlic minced
- 3 tomatoes diced
- 2 to 3 canned chipotle peppers in adobo sauce chopped (adjust to taste)
- 1 tsp of dried oregano
- 1 tsp of ground cumin
- 1 bay leaf
- salt and pepper to taste
- 1 cup of chicken broth
- 8 tostadas (crispy corn tortillas)
- 1 cup of shredded lettuce (optional)
- 1 avocado sliced (optional)
- 1/2 cup of crumbled queso fresco or feta cheese (optional)
- 1/2 cup of Mexican crema or sour cream (optional)
- limes wedges for serving
Directions
Print1. In a large pot, add the chicken breasts and enough water to cover them. Add a pinch of salt. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the chicken is cooked through.
2. Remove the chicken from the pot and let it cool slightly. Shred the chicken using two forks.
