  1. 8 x medium eggs
  2. 1 cup bimi broccoli
  3. 2/3 cup sugar snaps
  4. 1/3 cup fresh peas
  5. 1 red onion
  6. 3/4 cup asparagus
  7. 4 tbsps Maille traditional dijon originale mustard
  8. shiso purper

1. Cut each vegetable into even sized pieces and blanche them.

2. Whisk the eggs and fry in a non-sticking pan 4 small or 1 big omelet.

3. Spread the Maille Dijon mustard on the omelet and transfer the vegetables on top of that.
