- 4 large zucchini *, sliced lengthwise
- 2 tbsp. vegetable oil
- 1 3/4 cups water
- 1 package Knorr® Mexican Rice Side
- 1 cup shredded Monterey Jack cheese
Directions
Print1. Preheat over to 375°.
2. Scoop out pulp of zucchini and chop. Heat oil in medium saucepan over medium heat and cook zucchini pulp, stirring occasionally, until tender, about 2 minutes. Stir in water and Knorr® Fiesta Sides™ - Mexican Rice. Bring to a boil. Reduce heat to low and simmer covered 7 minutes or until rice is tender.
3. Arrange zucchini on baking sheet. Evenly fill with rice mixture. Sprinkle with cheese. Bake 25 minutes or until zucchini are tender.
