This Zucchini Grain Bowl is bursting with fresh flavor! Zesty chili-lime dressing brings this plant-based meal all together.

Ingredients List
  1. ½ cup Hellmann’s® or Best Foods® Chili Lime Mayonnaise Dressing
  2. 2 Tbsp. Honey
  3. 1 cup quinoa, prepared according to package directions and cooled
  4. 1 large zucchini, (about 13 oz.) or 4 -5 loosely packed cups
  5. 1 can (15.25 oz.) low sodium corn kernels, drained
  6. 1 cup diced heirloom or cherry tomatoes
  7. 1 avocado, sliced

1. Combine Hellmann’s® or Best Foods® Chili Lime Mayonnaise Dressing and honey in small bowl. Toss ¼ cup of the Mayonnaise mixture with quinoa and divide evenly among 4 bowls.

2. Using a vegetable peeler, peel long wide strips of zucchini into ribbons. Evenly top quinoa with zucchini, corn, tomatoes and avocado; evenly top with remaining Mayonnaise mixture. Serve garnished, if desired, with sliced scallions, chopped fresh cilantro and additional drizzle of Hellmann’s® or Best Foods® Chili Lime Mayonnaise Dressing.
