Canh Chua (Vietnamese Sour Soup)
Canh chua or cá nấu (cooked fish) is a Vietnamese sour soup that is known for its bright and tangy flavors. The soup typically features a mix of fish or shrimp, vegetables such as tomatoes and okra, and sour elements like tamarind or pineapple. Our version is made with Knorr® Original Tamarind Soup Mix for the perfect balance of sour and savory every time.

- 2 to 3 lbs of catfish steak (cleaned and ready to go)
- 14 cups of water
- 1 tbsp of cooking oil
- 2 to 3 tomatoes
- 1 onion
- 1 tbsp of minced garlic
- 2 to 3 oz of rock sugar
- 2 tbsp of Knorr Chicken Broth Mix
- 1 pack of Knorr Original Tamarind Soup Mix
- 1 tsp of MSG (optional)
- 1/2 tbsp of fish sauce
- 1/2 cup of sliced pineapple
- 1/2 cup of rice paddy (ngò om)
- elephant ears (bạc hà)
- okra
- bean sprout
- Thai basil (optional)
- jalapeño (optional)
Directions
Print1. In a pan add cooking oil and garlic. Fry until garlic is fragrant. Add tomatoes and onion. Sauté for 2-3 minutes and set aside.
2. Bring water to a boil.
3. Add MSG, sugar, Knorr Chicken Broth Mix, Knorr Tamarind Soup mix, fish sauce and fish. Cover and bring to a boil.
4. Uncover and scoop out all the scums.
5. Add sauté tomatoes, pineapple and okra.
6. Bring to a boil and low to simmer for 6-8 minutes. Taste and adjust.
7. Add elephant ears. Continued to let it cook for another 2 minutes then turn off heat.
8. Add rice paddy.
